Maison Sassy has teamed up with Coupette , a world-renowned cocktail bar featured in the 50 best bars in the world in 2019, to create a Calvados of excellence.

The partnership with Coupette, London’s leading Calvados bar, has resulted in two unique spirits including an amber-coloured Calvados XO with aromas of stewed apple, nutmeg and hints of cocoa. Having spent at least six years in French oak casks, this unique spirit is best served neat, as a digestif, or simply on the rocks.

The terroir of our Calvados XO x Coupette


Our Calvados XO x Coupette is an artisanal product. More than 30 varieties typical of the Normandy countryside are used in the composition of this Calvados XO. The apples are harvested from October to November, then washed and sorted by hand before being pressed. After pressing and alcoholic fermentation, the ciders are distilled in February and March.

The production of this Calvados XO x Coupette is entirely environmentally friendly. It is an authentic and tasty Calvados, ideal as a digestif or to enjoy with a piece of chocolate or a cigar.


A unique flavor


This Calvados XO x Coupette is a real gem for lovers of artisanal and quality Calvados XO. It has a mahogany hue due to aging in oak barrels that immediately catches the eye.

On the palate, the woodiness is more present, marrying ideally with the aromas of stewed apple, nutmeg and notes of cocoa . A beautiful tannic structure gives it great finesse in the mouth.

This Calvados XO x Coupette is a real delight for the taste buds, it is balanced, perfectly structured and will wonderfully accompany your moments of relaxation. It is a natural product, respectful of the environment, with authentic and artisanal flavors, a real pleasure to taste.


Know-how made in Normandy


Distillation takes place 24 hours a day, 7 days a week, allowing for greater consistency in the quality of Calvados. The still used near the Château dates back 4 generations (1923).

All our blends are made by systematically retaining a “lightning base” from the previous blends, thus improving the quality of the Calvados. This also provides better continuity and regularity in the blends.

The beginning of the aging process takes place in 400-liter barrels for 12 months to provide a tannic structure, then the Calvados is transferred to old oak tuns of 3,000 to 5,000 L, over 100 years old (some date back to 1877) in order to provide oxygen, aeration, and to preserve the fruitiness of our Calvados.

The recipe for this Calvados XO x Coupette, carefully developed and jealously protected, is inspired by the Calvados served at the Château de Sassy for generations. It has been perfected with our cellar master to meet the demands of your delicate taste buds, while continuing our quest for excellence.
