Maison Sassy has teamed up with Coupette , a world-renowned cocktail bar featured in the World's 50 Best Bars in 2019, to create two Calvados.

The partnership with Coupette, London’s leading Calvados bar, has resulted in two unique spirits, the first, Calvados Fine , is a fresh, youthful and vibrant Calvados with aromas of fresh green apple. Once distilled, the eau de vie spends at least two years in oak barrels, giving it structure, complexity and a sophisticated finish. This Calvados can be enjoyed in cocktails, or on its own over ice.

A Calvados XO completes this partnership, its amber color offers aromas of stewed apple, nutmeg and notes of cocoa. After spending at least six years in French oak barrels, this unique spirit is to be served neat, as a digestif, or simply with ice cubes.

Both blends are based on a family recipe from the long-owned Château de Sassy, ​​which is home to a large number of organic apple orchards.

Calvados Fine

Color: Light gold with hints of brandy

Nose: fresh aromas of tangy apples

Tasting notes: Green apple, white flower, great liveliness, tonic, fresh attack.

Calvados XO

Color: Amber yellow color

Tasting notes: Good balance between the tannins of the barrels and the liveliness of the fresh fruits.

Orchards 

Maison SASSY benefits from 15 hectares of orchards located around the Château de Sassy, ​​the oldest of which is over 100 years old. They use over 30 species of apples from the surrounding "high-stem apple trees" and carefully select the best fruits, essential to create the best eau-de-vie. The orchard has the following environmental benefits: no chemical treatments, organic lawn mowers (sheep!) and beehives to stimulate the ecosystem through pollination.

Terroir 

A mixture of loamy and clayey soils located around the Château de Sassy, ​​similar to that found in Bordeaux. The proximity of the forest gives the apple a particular acidity, attenuated by the softness of the clayey soils.

Pressing 

October and November, slow alcoholic fermentation at 10-12°C and maturation on fine lees.
